These two foods have graced the pages of the world’s oldest stories, and yet still exist to deliver wonderful flavors for us today.

This simple date overnight oats recipe is very satisfying as well as incredibly easy to make.
And, dates are a nutritious fruit. They are a good source of fiber, potassium and vitamin B6. The sugar in dates is natural and does not cause a spike in blood sugar levels like refined sugars do. Dates also contain antioxidants that can help protect cells from damage.
Not only is this grouping of foods healthy, it also fits into the current trends for healthy food in that it’s also vegan and gluten free.
This recipe calls for a small amount of chia seeds, which are the edible seeds of a flowering plant from the mint family. There are many benefits to making these little seeds a part of your healthy diet.
They are small but pack a punch of vitamins and antioxidants, and can help fight free radicals in your body. Free radicals can cause cell damage, and when we can reduce them, we can help battle heart disease, certain types of cancer, and cognitive decline.
Note that although they offer a number of health benefits, feel free to eliminate them if you have difficulty swallowing. Dry chia seeds swell up to about 10 – 12 times their weight when put in liquid.

Date Overnight Oats
Equipment
- mason jar or covered bowl
Ingredients
- 1/2 cup rolled oats (not quick or instant)
- 1/2 cup almond milk or other plant based milk
- 1/2 tsp vanilla extract
- 1 tbsp chia seeds (optional)
- 1 Medjool date, pitted and chopped
Instructions
- In a jar or container, combine the oats, almond milk, vanilla extract and chia seeds.
- Stir in the chopped date.
- Cover and refrigerate overnight or for at least 4 hours.
- Enjoy as is or top with your favorite toppings like nuts, seeds, fruit or jam.
