Macaroon Strawberry Swirl Oatmeal
Macaroon Strawberry Swirl Oatmeal
Ingredients
- 1/2 cup shredded coconut
- 1 cup quick oats (or other type if preferred)
- 1/8 cup unsweetened almond milk
- 1/8 teaspoon sea salt
- 1 tablespoon brown sugar
- 2 teaspoons strawberry jam natural, organic, or home made is preferred
- 1/2 cup sliced strawberries (optional)
Instructions
- Toast the coconut in a pan on the stovetop over medium-low heat for 3 – 6 minutes. Make sure to stir continuously for even browning. Set aside to cool.
- Prepare the oats per the directions and type you are using.
- Stir in the almond milk, brown sugar, and salt.
- Place the oatmeal in two bowls, then add a generous teaspoon of strawberry preserves to each. Mix slightly to form swirls.
- Sprinkle a tablespoon or two of the toasted coconut on each serving.
- Place a few strawberry slices on top for garnish.
